If you are searching to taste the Pyrenees in liquid form, discover the wines of Babche; a pint-sized outlet working with select parcels of organically farmed and certified vineyards in the Landsborough Valley. All work from vineyard to bottle is completed by hand. Fruit is picked and brought to the winery on the farm then gently and slowly processed on a basket press. All fermentation uses its native yeasts. Wine is then matured in stainless or old French oak barrels and with much consideration, there is no use of additives nor preservatives at any given point. The result, single variety wines expressing purity and the distinct nuances of the Pyrenees made in the technique of past generations – by hand and unadulterated.
